This recipe has been my favorite for many years now and still makes the most perfectly chewy, chewy, buttery rolls. But I especially like it because the ingredient list is simple, the rise times are minimal, and the batter can be easily made by hand or using a stand mixer. Ingredients for homemade buns:
Before we get to the full recipe below, here are some notes on the ingredients you will need to make this homemade buns recipe:
- Water and milk: These will serve as base liquids for the bread dough. I have used cow's milk, but you are welcome to replace it with plant-based milk (like oat milk or almond milk).
- Melted butter: That we will both bake in the rolls and brush on top.
- Honey: To add just a hint of sweetness.
- Active dry yeast: This recipe requires 1 tablespoon of yeast. So if you are buying your yeast in 0.25 ounce packs, you will need a little more than one pack.
- Flour: I have only tested this recipe with all-purpose flour. But if you try different flours, please let us know in the comments section below!
- Salt: That we will mix with the rolls to bring out all those delicious buttery flavors. Don't hesitate to sprinkle a little flaky salt on the hot buns just before serving too!
Tips for making buns:
The full recipe is included below for how to make these buns, but here are some helpful tips to keep in mind:
- Make sure your yeast is not expired. This is one of the most common reasons a batch of bread dough does not rise. Check the expiration date of any yeast that might be left in your pantry. And if the yeast doesn't start to swell and bubble after 5 minutes after it's been added to the wet ingredients, discard the batch and start over with new yeast.
- Check the temperature of the liquid ingredients. When heating liquid ingredients (water, melted butter, milk and honey) it is essential that they are in the temperature range of 100 to 110 ° F. If the mixture is too hot it can kill the yeast. If it is too cold, the yeast may not activate. The mixture should be hot and not hot to the touch, but I still recommend testing the mixture with a cooking thermometer just to be sure.
- Don't skip the rise times. They are essential in helping the dough to rise and create the soft, chewy texture that we are looking for.
- No worries about perfection. When you divide the dough into 12 rolls, don't worry that they are all perfectly equal in size. They will all cook together in the pan, and if some are slightly larger or smaller, hakuna matata. 🙂

Here are some other possible variations you could make to this bun recipe:
- Advance Option: For pre-made buns, follow the recipe throughout the step of shaping individual buns and placing them in the baking dish. Then cover the baking dish tightly and refrigerate for up to 48 hours. Transfer the dish to the counter and let it warm to room temperature for 2 hours before baking, then bake as directed.
- Make it vegan: Use plant-based milk and butter and your favorite sweetener in place of honey.
- Add the garlic: Add 1 teaspoon of garlic powder to the bread dough to make the buns more winged, and / or you can also simmer chopped garlic with butter to brush the tops of the buns after baking.
- Add herbs: Add 1 to 2 tablespoons of finely chopped fresh herbs (like rosemary or parsley) to the bread dough to add flavor to the buns, and / or you can also mix some fresh herbs with the melted butter for brush on top of rolls after cooking.
- Add cheese: You can also mix 1/3 to 1/2 cup of freshly grated cheddar cheese to make cheese rolls. (Or I also like tossing in freshly grated Parmesan, then sprinkling it over the rolls for the last 5 minutes of cooking.)

- Prepare your oven and baking dish. Heat the oven to 400 ° F. Grease a 9 x 13 inch baking dish with cooking spray and set aside.
- Heat the liquids. In a microwave-safe bowl or measuring cup, combine the water and melted butter, then add the milk and honey and stir until combined. Heat the mixture in the microwave for 1 minute and stir it. Continue to microwave the mixture at 15 second intervals, until it reaches 110 ° F (it will be hot but not hot to the touch) and the butter is completely melted.
- Add yeast. Pour the liquid mixture into the large bowl of a stand mixer. Then sprinkle the yeast evenly on top, stir quickly with a fork to combine, and let the yeast activate for 5 minutes until frothy.
- Add the dry ingredients. Add to 3 1/2 cups flour (not all the flour) and salt.
- Mix. (See alternative instructions in the notes below for how to knead the dough by hand.) Use the dough hook to stir in the dry ingredients on medium-low speed until combined. If the dough sticks to the sides of the bowl, add 1/4 cup of flour at a time until the dough pulls away from the sides of the bowl and is only slightly tacky to the touch. (Use only 4 cups of flour in total.) Continue mixing on low speed for 4-5 minutes until dough is smooth. Then shape the dough into a ball with your hands and transfer it to a greased bowl.
- Let the dough rise. Cover the bowl with a damp towel or paper towel and let rise briefly for 15 minutes.
- Form the rolls. Gently prick the dough and divide it into 15 equal sized pieces. Shape each piece into a ball and place the dough balls in the greased baking dish. Cover the dish again with a damp towel or paper towel and let the dough balls rise for an additional 15 to 20 minutes.
- Cook. Uncover and bake for 15 minutes, or until the rolls are lightly browned on top and cooked through.
- Brush with butter. Transfer the baking dish to a cooling rack and brush the tops of the rolls with melted butter.
- Serve hot. Then serve hot and enjoy!
Yeast: I usually buy my yeast in bulk. But if you use the 0.25 ounce sachets, they each contain 2.25 teaspoons of yeast. So you will need a little more than a packet to make 1 tbsp.
How to knead the dough by hand: If you don't have a stand mixer, no problem! For step 5 (mixing the dough), simply stir the dry ingredients into the dough as much as possible. Then, flip the dough onto a floured surface and knead by hand for 5-7 minutes until smooth, adding up to 1/4 cup more flour if the dough is too sticky.
