The other day on Instagram, I delved into my stories, asking if you've heard of Gooey Butter Cake or if it's new terminology, and I was surprised how many hadn't heard. talk about this delicious dessert!

With a new grocery store, I also found a new favorite product in the dairy aisle, Challenge Butter.

Now it comes from a girl who lives by the motto: "Is it going to snow?" Well, we better stock up on basic necessities… BUTTER, bread, milk and eggs. … So if he made the top 4 on my list, then you know I'm going to be picky about my butter.

Whether it's butter for making scrambled eggs for my hubby and little boys in the morning or making a family favorite treat for the holidays ... butter is always a rotating item on our store list, and it must be GOOD butter, like Challenge Butter.

Challenge Butter has been churned daily since 1911, is owned by a family farmer and is made with fresh sweet cream. So, as a girl who grew up on a farm, I have every heart for a product with qualities like these.

And when it comes to making a Gooey BUTTER Cake, you have to have a good butter, preferably with sweet cream!

But rather than just teasing yourself about this goodness, let's get into the details of how to make it so you can make it as a dessert of the week or as a staple dessert for the holidays!

What is gooey butter cake?

Sticky Butter Cake is a non-icing flat cake made with everyday ingredients, like butter, eggs, sugar, cream cheese, and sometimes, a cake mix to keep it quick and easy!

How to make a gooey butter cake

For ingredients and full recipe instructions, you can find the free printable recipe card at the bottom of this article. However, I'd love to walk you through the step-by-step process with pictures so you can get more helpful tips along the way!

First of all I have to say that you are going to be pleasantly surprised at how easy this recipe is and how much your friends and family will love it!

This recipe I make uses a cake mix which makes things even easier in the kitchen and I think we can all go for that.

What you will need to make this cake is,

  • yellow cake mix
  • eggs
  • Challenge unsalted melted butter
  • Challenge cream cheese
  • vanilla extract
  • Granulated sugar

That's it! Now let's go over the steps to make it, as you won't be using all the eggs and butter at once, so be very careful about how much and when to add them.

Gooey Butter Cake Recipe

First, preheat your oven to 350 degrees.

Then you will start by grabbing a medium or large mixing bowl.

Add to your cake mix, 1 stick of melted butter and 1 egg.

Mix with a blender until well combined.

Take a 9 × 13 baking dish, spray with non-stick cooking spray and spread the cake batter in the bottom of the pan, making sure to distribute it evenly.

NOTE: You might panic slightly, thinking you don't have enough to cover the pan. You will be! Just keep spreading it, making sure the entire bottom of the pan is covered.

Set the baking dish aside and rinse the bowl you used for the cake batter or take another bowl so you can mix in the gooey butter filling.

In the mixing bowl, add the cream cheese and, with the clean accessories, mix the cream cheese until light and fluffy.

Pour 1 stick of melted butter ...

… The 2 eggs and the vanilla extract.

Mix until well blended.

… And mix until well blended.

Pour the powdered sugar mixture on top of the cake mix ...

… And distributed evenly. (I like to use a rubber spatula for this.)

Bake the cake in a 350 degree oven for about 35 to 40 minutes or until the top of the cake turns golden brown.

After the cake is out of the oven and while the cake is still hot, sprinkle about 2 tablespoons of powdered sugar!

How to serve the gooey butter cake

We prefer to cut the gooey butter cake while it's still hot and top each piece with a small slice of butter so that it melts gently on the powdered sugar and warms, gooey, goodness.

Does Gooey Butter Cake need to be refrigerated?

Sticky butter cake can actually be stored at room temperature for about 2-3 days or refrigerated for up to 4-5 days.

However, I recommend warming it up a bit and adding that chunk of butter before serving if you're eating leftovers or making it ahead of time.

Can you freeze a gooey butter cake?

Absolutely! Cut it into squares for easier serving later, and when stored properly (in an airtight container), the gooey butter cake should be frozen for at least a month. Just be sure to allow enough time to thaw when you serve.

Ingredients

  • 1 15.25 box of yellow cake mix
  • 3 eggs (Divided 2 + 1)
  • 2 The sticks Challenge the unsalted butter fade (divided: 1 + 1)
  • 8 oz. package Challenge Cream Cheese, softened softened
  • 1 tablespoon vanilla extract
  • 2 cups Granulated sugar with 2 extra tablespoons for garnish

Instructions

  • Preheat your oven to 350 degrees.

  • In a mixing bowl, combine the yellow cake mix, 1 egg and 1 stick of Challenge melted butter with a mixer.

  • Take a 9 × 13 baking dish, spray it with non-stick cooking spray, and press the cake mix into the bottom. Reserve the baking dish.

  • If you prefer, wash the same bowl and beaters to combine the other half of the ingredients to make the gooey butter filling.

  • Stir in the softened cream cheese until light and fluffy, then add the vanilla, 1 stick of melted butter and 2 eggs. Mix until well blended, then add the powdered sugar (reserving about 2 tbsp) and beat well.

  • Spread the powdered sugar paste evenly over the cake batter and bake at 350 degrees for 35 to 40 minutes or until the top is golden brown.

  • Remove from the oven and sprinkle about 2 tablespoons of powdered sugar on top of the still hot cake.

Notes

Feel free to serve hot with an extra slice of butter on each piece or let cool to eat later.
