The fall season is upon us and I'm pretty much okay with that, I guess? lol Here's a classic lentil soup to add some heat to your cooking.

This recipe is incredibly simple and tasty! It freezes great too if you want to save leftovers for another time! Enjoy with your favorite cereals, croutons and / or garnished with Parmesan!

  • ¼ Chopped off olive oil
  • 2 large onions, chopped
  • 1 carrot, chopped
  • ½ teaspoon each thyme and oregano
  • 4 cups vegetables soup
  • 1 Chopped off brown or green lentils, rinsed
  • ¼ Chopped off chopped fresh parsley or cilantro
  • 2 cups canned diced tomatoes
  • Salt to taste
  1. Heat the oil in a large saucepan and sauté the onions and carrots for 3 to 5 minutes. Add the herbs and sauté for 1 minute. Add the broth, lentils, parsley or cilantro and tomatoes. Cook over medium heat, covered, until lentils are tender, about 45 minutes. Stir occasionally, adding more water as needed if the soup dries. Adjust for the salt and enjoy!
