I don't know about you, but I became quite the barista during our quarantine periods.

I've always loved coffee (well, since college when I finally started drinking it) but now that I'm getting older I really appreciate the art behind the perfect cup.

Even though I rely on my local cafe when times are normal, and they know my name and order when I walk in, I quickly realized that I was going to have to get good at this cafe.

I did a ton of research on the French press, since that's what I had in the closet, and I'll tell you, I'm pretty good.

On the other end of the coffee spectrum, some mornings I want something cold because the weather has started to heat up.

I saw Dalgona coffee EVERYWHERE and finally picked up some instant powdered coffee off my grocery shopping list to try it out.

While researching this, I also realized that people were making a Matcha version that not only looked good, but sounded delicious.

I immediately ran upstairs to grab my bundle of Now Foods Organic Matcha Powder & two masterpieces were born… in my opinion.

So what is Dalgona coffee?

Dalgona coffee is a drink made by whisking equal proportions of instant coffee powder, sugar and hot water until it becomes creamy, then adding it to cold or hot milk.

IMPORTANT NOTE ON THE “WHIPPING” MATCHA !!

When it comes to Matcha, all of my research has shown that it does not do the same as instant coffee powder.

It tends not to "whip" with just hot water and sugar and some people have suggested using a can of pure coconut milk, letting it sit in the fridge overnight to harden, then using the coconut fat on top of the can to whisk with the matcha.

IT WORKED FOR ME! I therefore highly recommend.

Just be careful when you go scratch it out of the box you might create a bit of a mess, which I'll be honest, I tend to make a mess every time I'm in the kitchen.

When it comes to adding sugar, I always use my cup for cup Now Foods Sugar Free Sugar, that I am downright obsessed with and use in all my baking as well, and wanted to experiment.

As for the 'whipping', I was going to use this large stainless steel bowl first, but I thank my best friend Sarah who recommended using a tall glass to help keep air in and create consistency. mellow.

I essentially whipped the coffee and matcha for the same amount of time (around 60-90 seconds) at high speed with a hand blender using just one attachment.

You want to bring the blender in an "up and down" motion through the glass to help add air.

Once you've got them to the consistency you want, you'll drop the mixture onto an iced milk of choice. I used almond milk.

From there you can mix the mixture with your coffee or matcha because for me the flavor of the mixture will be strong.

Here are the basic recipes:

DALGONA COFFEE WITHOUT SUGAR

  • 1 tablespoon of instant coffee or instant espresso
  • 1 tbsp granulated sugar (I used sugar without sugar)
  • 1 tablespoon of lukewarm water
  • Milk for base and ice

HOW? 'OR' WHAT:

Add the instant coffee, unsweetened sugar and lukewarm water to a tall glass and use a hand mixer to whisk vigorously until the mixture becomes thick and whipped (about 60-90 seconds on top) using a up and down movement to add more air.

You can also whip by hand for a few minutes and prepare to sweat as this is a workout.

MATCHA DALGONA

  1. 1 To Now Foods Matcha powder
  2. 1/4 to 1/2 cup solid coconut cream
  3. 1 to 2 TB Sugar without sugar to taste
  4. Ice cream and milk of choice for the base

HOW? 'OR' WHAT:

Add the matcha powder, unsweetened sugar and coconut cream to a tall glass and use a hand mixer to whisk vigorously until the mixture becomes thick and whipped (about 60 to 90 seconds on high speed ) moving up and down to add it. more air.

I creamed the coconut first just to check the consistency before adding the sugarless sugar and matcha powder.

Serve over ice and milk of your choice.
