I'm a bit of a gingerbread freak and make no apologies for that. I just love that deep spicy flavor and all the nostalgic feelings it evokes. There is nothing that says happy holidays like gingerbread.

How To Make Keto Gingerbread Blondies

This keto blondie recipe is quick and easy, and really only takes about 30 minutes from start to finish. The hard part is waiting for them to cool down so you can dig!

Here are my top tips for getting it right:

  1. Prepare your dry ingredients first, whisking together to break up any lumps. Almond flour and sweetener can clump together a bit, so be sure to break them up.
  2. Use a brown sugar substitute for a more authentic gingerbread flavor. If you don't have access, try adding 2 teaspoons of molasses. It will only add about half a gram of carbohydrate to each bar.
  3. The cocoa powder is simply used to make the gingerbread blondies look darker. It will not taste like chocolate at all.
  4. Gelatin is optional, but it adds a delicious chew.
  5. Determine your own level of spices. If you like really gummy things, feel free to add some.
  6. Brighten up your keto gingerbread blondies with white chocolate chips! It pairs so well with gingerbread and the contrast of white highlights with dark blondies is so pretty. You can add dark chocolate chips if you prefer.
  7. Use a metal baking dish because it conducts heat more efficiently and evenly. Glass or ceramic can overcook your blondies around the edges while leaving the medium underbaked.
  8. Remove from the oven before they appear to be fully cooked. They will continue to cook a bit in the pan and you want that maximum chewing! They should be puffy but still a bit soft to the touch.

How to store gingerbread blondes

Like any keto brownies or blondies, they are good on the counter for a few days but should be refrigerated or frozen if they last longer.

Do not leave them in the open, exposed to air, as they can dry quickly. Cut them into bars and store in an airtight container or wrap tightly in plastic wrap.

For maximum glue after storing them in the fridge or freezer, give them a quick microwave zap. Get again this beautiful white chocolate all melted!

  1. Preheat the oven to 325F and grease an 8 × 8 inch metal baking dish.
