Chia seeds -black or white or a combo of both. Any type of chia seeds will work well. You can buy whole chia seeds and grind them in a grinder or blender. Or buy ground chia seeds directly. I am providing both scoops in the recipe below because ground chia seeds make a larger volume than raw chia seeds.

Almond milk - I used Almont Vanilla Milk from Califia Farms, but any almond milk will do.

Sunflower butter - Feel free to use any other nut butter flavor.

Cocoa powder without sugar U– this adds the nice chocolate flavor with no added sugar.

Sugar free liquid sweetener / agave syrup - I used a little agave syrup instead of the sugarless liquid, but you can do either.

Vanilla - optional but always better with.

Measurements

-2/3 cup whole, black or white chia seeds or 1 cup ground chia seeds
-3 tablespoons of unsweetened cocoa powder
-2 cup Almond Breeze Original Almond Milk
-2 tablespoon of sunflower butter
-1/4 cup of sweetener without sugar or a pinch of agave syrup (with the agave, play with the amount you want to add by adding a little, then tasting it, etc.) -1/2 spoon vanilla
-1/2 teaspoon of vanilla

Instructions

1) Place the chia seeds in a blender and blend for about 20 seconds to form ground chia seeds.
2) Add all the rest of the ingredients - the order doesn't matter.
3) Mix again for 30 seconds - 1 minute until all ingredients are combined. If it sticks to the side of the mixer, you can stop the mixer every 30 seconds, scrape the side and repeat until the mixture is smooth. You can't over treat it!
4) Taste and adjust the texture and smoothness. Add more almond milk, 1 tbsp at a time for a more liquid pudding.
5) Transfer to a ramekin or serving jar (or just a glass dish like I did).

Enjoy immediately or refrigerate at least 1 hour for a fresher pudding.
Store up to 4 days in the refrigerator in an airtight container
