Back to school has arrived and this maple and cinnamon sunflower seed butter is a must-have recipe. It's an easy substitute for peanut butter or almond butter that you typically use toast or sandwich with and it's incredibly easy to make at home. Plus, it's perfect if your school or daycare is nut free.

While I generally prefer my nut butter to only use two ingredients, nuts and salt, I decided that adding a few more ingredients to this version was worth it. Especially if your kids are used to eating peanut butter.

Sunflower seeds taste a bit different and while they don't taste bad I have found it helpful to add a little extra sweetness and flavor when introducing a new one. food like this. As they adjust to taste, you can always decrease the amount of maple syrup you add.

For this seed butter, you only need a few simple ingredients:

  • Sunflower Seeds - I made this with raw roasted sunflower seeds and I prefer to use roasted sunflower seeds. If you choose raw, you can roast the seeds in the oven for about 10 minutes to help release their natural oils, but for me buying them roasted is easier because I can skip this step.
  • Cinnamon - Adds so much flavor.
  • Maple syrup - for sweetness. Start with a little and add more if needed.
  • Vanilla - Optional but another way to add flavor.
  • Salt - as much or as little as you want!

And that's all! Maple, cinnamon and vanilla add a fun twist to the classic nut and seed butter. Use it on sandwiches, smoothies or sauces or add it to your morning oatmeal. And if you've never made nut or seed butter at home, consider that a kick in the pants, encouraging you to give it a try. And add flavor to make things a little more exciting!

Ingredients

  • 2 cups sunflower seeds (I used roasted unsalted seeds)
  • 1-2 Maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract, optional
  • pinch of salt

Instructions

  1. Combine sunflower seeds, cinnamon and salt in a food processor and blend for 7-10 minutes until desired consistency is achieved.
  2. Add maple syrup and vanilla, if needed. Pulse several times to mix and transfer to the storage container.

Notes

Do not add maple syrup or vanilla at the start, as this could seize the seed butter.

If your sunflower seeds are raw, lay them out on a baking sheet at 350 ° C for 10 minutes before processing.

Feel free to adjust maple, cinnamon and vanilla according to your flavor preferences. Just be aware that if you add more liquid after it's already creamy, it will probably seize up for a little while. Just let the processor continue to run and it will recover! The batch in the photos is raw sunflower seeds, so it's not as smooth as when you start with roasted sunflower seeds.
