Hi friends!

This peach and zucchini smoothie bowl is a favorite here with my boys. I have a vegetable rotation that I go through adding to smoothies, including spinach (check out our must-have smoothie), cauliflower (you can try it in this Blueberry Cauliflower Smoothie ) and today we're switching to zucchini as the vegetable of choice, which is perfect because your gardens and / or farmer's markets are probably overflowing with them right now.

Late summer is a great time to fill your freezer with zucchini so you can enjoy them in your smoothie all year round! I like to steam mine first as it is easier to digest for some people (including me) but you can freeze it raw if you like. To steam it, I just dice it, put it in a glass bowl with a little water, cover it with a paper towel and microwave for 2-3 minutes. Let cool completely then freeze on a baking sheet. Transfer to a freezer-safe bag when frozen. I made a bowl of it because I have a personal preference for super thick smoothies, but with a little extra liquid you can easily make it into a drinkable smoothie.

Here's what you need for this smoothie:

  • Zucchini - raw or steamed, but freeze them first before using them in smoothies.
  • Peaches - you can really use all the fruit you want if you don't have peaches on hand.
  • The vanilla yogurt will add a little extra sweetness or you can use plain.
  • Dates - optional but usually throw in a couple for extra softness and fiber.
  • Water - I usually use water for my liquid, but you can mix it up: water, juice, or milk

My kids gulped down this smoothie this summer because I sliced and froze a ton of peaches after receiving a big delivery from the peach truck. However, once we get to working on our stash, I'll probably make this same smoothie with frozen wild blueberries. If you or your kids don't like to drink green stuff, blueberries are great for hiding the green color!

Here's how you do it:
