It's my birthday! And I can't think of a better way to celebrate than to share a new recipe from Now Foods with you.

One of my favorite Now Foods products of all time is their Roasted cashew butter. I add a spoonful to yogurt, smoothies and love spreading it on gluten free toast. I've known for a while that Now Foods makes a few different flavors of cashew butter, but so far I've mostly been the purest, sticking to the simple yet delicious roasted cashew butter.

In the spirit of getting older for a year and trying not to get stuck in my own way, I decided to expand my cashew butter arsenal and get adventurous with another flavor: Wasabi Ginger.

I had a few veg left in my fridge, so I figured an anything but a sink style stir-fry with ginger and wasabi sauce would be the perfect thing. I was not wrong.

Ginger and Wasabi Stir-Fry

I combined the ginger and wasabi cashew butter with a few other ingredients to create a bold sauce with the perfect balance between sweet and spicy.

Just mix all the ingredients for the sauce and pour it over sautéed chicken thighs and any type of sautéed veg you desire (I pulled out a bunch I had left over from my fridge and topped it off with some fresh veg from the store. ). You'll have a winning dinner in minutes.

Ginger and Wasabi Stir-Fry (Soy Free)

Ingredients

  • 1 to 2 tablespoons Now Foods Extra Virgin Olive Oil
  • 1.5 lbs boneless, skinless chicken thighs, chopped into 1/2-inch cubes
  • 2 cups of broccoli florets
  • 1 cup snow peas
  • 1 green pepper, chopped
  • 1/2 yellow onion, chopped
  • 1/2 cup shredded red cabbage
  • salt and pepper to taste
  • 1/2 cup almond milk
  • 2 tablespoons of amino coconut
  • 2 tablespoons of red wine vinegar
  • 1/2 tablespoon of honey
  • 3 tbsp Cashew butter with ginger and wasabi

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Season the chicken with salt and pepper and brown on all sides (about 30 seconds per side).
  3. Add the broccoli, peas, bell pepper and onion to the wok. Season with more salt and pepper and toss to combine. Cover and cook for 10 minutes.
  4. Uncover and filter any excess liquid from the vegetables.
  5. Add the cabbage and toss to combine. Cover and cook for another 5 minutes.
  6. Meanwhile, prepare your sauce. Add almond milk, coconut aminos, red wine vinegar, honey and cashew butter with ginger and wasabi in a blender. Mix until well blended.
  7. Add the sauce to the wok and cook, uncovered, for 2-3 minutes more.
  8. Serve on its own or with rice or cauliflower rice.
