Air fryer muffins! Who knew it was even possible? Well maybe you did but it took me a while to figure it out, apparently.

I use my air fryer frequently, but I lean more towards savory recipes. When it's too cold and rainy to use my grill you will often find me air fryer pork chops For dinner.

And maybe whip some Brussels sprouts air fryer for an easy side dish.

But cooking in my air fryer wasn't really on my radar. So far with these delicious keto cranberry orange muffins. Fast and easy, and bursting with flavor!

Cooking in the air fryer

You can really cook for taste in an air fryer. Since this is truly a kind of convection oven, it's easier than you might think.

First of all let me say that not all air fryers are created the same when it comes to cooking. I have a larger Cuisinart oven which is also an air fryer and it does a terrible job. It tends to brown things way too quickly on the outside when they are not cooked in the middle.

But I recently had the air fryer cover for Instant Pot, and I am amazed at how well it works. It's a great space-saving device if you only have one countertop device.

For cooking in an air fryer, you need to lower the heat to around 310F. Seems like a good temperature for air fryer muffins and cupcakes.

Keto Cranberry Orange Baked Muffins

No air fryer? No problem!

These keto cranberry orange muffins are also easy to bake. They are in fact a reduced variation of some of my keto muffin recipes.

To bake, simply preheat the oven to 325F and line a regular muffin pan with 4 silicone or parchment pans. Prepare the dough as directed and divide it among the muffin cups. Bake, 25 to 30 minutes, until golden brown and firm to the touch.

And if you want a regular 12 pack of muffins, that's that easy! Simply multiply all the ingredients by 3.

Tips for Keto Cranberry Orange Muffins

These are so easy and delicious, and just like the Cranberry Orange Muffins you once loved! Here are my top tips for getting it right:

  1. Silicone muffin tins are a must for baking in an air fryer. Parchment paper is too brittle to hold its shape when filled with dough. You can also buy air fryer silicone muffin molds.
  2. Greek yogurt gives these muffins delicious moisture and makes them lighter than butter muffins. Make sure to use whole yogurt. You can also use sour cream if you prefer.
  3. First whisk all the wet ingredients together, then add the dry ingredients. If you find your paste is too thick, just add another tablespoon of water.
  4. Yes, protein powder is needed because it helps keto baked goods rise and keep their shape. You can use egg white protein powder or other vegetable protein powder. Don't use collagen because it makes them gummy.
  5. For a dairy-free version, try coconut cream instead of yogurt and replace the whey protein with egg white protein powder.
  6. I recommend cutting the cranberries in half for a more even distribution in the muffins.
  7. Keep the temperature of your air fryer low - 300F to 310F is all you need to cook in an air fryer. It is a very intense heat that circulates quickly through the machine, so baked goods can turn too brown if you go higher.
