I'm excited to add another Easy Slow Cooker Dinner to my repertoire! It seems like my kids' activities pick up quickly, and with different commitments several nights a week, the slow cooker is the only way to cook dinner at very specific times.

This one is also great for guests (if you're up for that sort of thing again) as it feeds a crowd. I did this when my mother-in-law came by for a quick visit recently, and she liked it so much that she asked to bring a copy of the recipe home. Now he's a winner! 🙂

This slow cooker Spanish chicken and chorizo ​​pasta is packed with Mediterranean flavors that will feed a crowd.

Ingredients

  • 2 pound sterling boneless, skinless chicken thighs
  • 2 connections chorizo ​​sausage, sliced ​​(about 1/2 pound)
  • 8 ounces mushrooms, (like shiitake or portobello), sliced
  • 1/2 onion, diced
  • 2 poblano peppers, seeded, cored and diced
  • 4 cloves Garlic, chopped
  • 1 teaspoon salt
  • 3/4 teaspoon cumin powder
  • 1/8 teaspoon Cayenne pepper (red)
  • 1 Chopped off chicken broth
  • 1 28 ounces can fire roasted diced tomatoes
  • 16 ounces angel hair pasta, cooked according to package directions

To serve

  • crumbled queso fresco
  • chopped fresh parsley leaves

Instructions

  1. Place the chicken, sausage, mushrooms, onion and peppers in the bottom of the slow cooker. Garnish with garlic, spices, broth and tomatoes. Put the slow cooker on high for 3 to 4 hours, or low for 6 to 7 hours, until the chicken can easily be shredded with a fork.

  2. Spoon the fat on top of the sauce (and discard), grate the chicken with a fork and serve over pasta with crumbled queso fresco, fresh parsley and salt and pepper on top.
