An easy and festive holiday recipe for gingerbread chia pudding! Get the taste of everyone's favorite Christmas cookie with the benefits and warmth of chia seeds in this delicious breakfast or snack recipe.

This is one of the OG recipes on my blog! I first shared this in 2013 when I was 24 and living with my parents. I had just returned from New York to Toronto and couldn't justify signing a lease when I didn't have a paid job!

This recipe was born when I had the freedom to experiment with the ingredients my parents had supplied at home. The end result is festive, hearty and quite tasty if I say so myself.

But oh how life has changed since! About a month after posting this gingerbread chia pudding, I left my parents' basement and moved into an apartment in downtown Toronto with C. 4 years later, we moved to San Francisco and 4 years later we moved to Minneapolis! Now I'm redoing and sharing the same recipe, but this time I'm in my 30s, living with my husband and TWO dogs (a dream!) In our first house. But some things stay the same ... like this delicious chia seed and gingerbread pudding recipe!

Ingredients for the chia and gingerbread pudding

  • Unsweetened non-dairy milk - you have options here! I like a combination of almond and oats, but coconut, soy, hemp, or rice milk works great!
  • Chia seeds
  • Molasses
  • Maple syrup - adjust this according to your preferences!
  • Dried ginger - you can also use fresh and chopped ginger - just double the amount!
  • Cinnamon
  • Ground clove
  • Vanilla extract

How to make chia pudding

It is not much easier than that! All you need is a little time and patience to make this recipe.

STEP 1: Combine all the ingredients in a mason jar or airtight container. Shake or stir well to combine.


2ND STEP: Place in the refrigerator overnight or for at least 6 hours. Serve cold with your choice of toppings.

Chia pudding tips

It's a very simple recipe, but if it's not for you, here are some tips!

  • There are two main types of chia seeds (white and black), but in my experience both work great for chia pudding! If your chia seeds aren't absorbing very well you might want to see how old your chia seeds are ... maybe it's time to buy some fresh ones!
  • Make sure to mix everything well - either shaking vigorously or stirring to make sure you break up any lumps. This will ensure that all of the seeds absorb the liquid and you won't have crunchy seeds in the morning!
  • If you like thicker chia pudding, use thicker milk such as whole coconut milk.

Chia and Gingerbread Pudding Toppings

This gingerbread chia pudding is super tasty on its own, but I still love adding toppings! Here are some ideas:

  • Chopped nuts
  • Chocolate drizzle or chocolate chips
  • Nut butter
  • Fruits - berries, chopped banana or pomegranate are calling me!
  • Coconut whipped cream
  • My favorite: Crumbled Gingerbread Cookies!
