How to make turkey meatloaf

Just like when preparing a classic beef meatloaf, the method of our recipe is quite simple. Here’s a look at how to make turkey meatloaf (full recipe is below):

  1. Cook the chopped mushrooms, onions and garlic in a skillet until tender.
  2. Stir in Worcestershire sauce and ketchup.
  3. Rehydrate the breadcrumbs in milk, which adds tenderness and moisture to the meatloaf.
  4. Toss mushroom mixture with breadcrumbs, milk, eggs and ground turkey.
  5. Form the mixture into a loaf on a baking sheet, spread a little extra ketchup on top, then bake.

We bake the meatloaf in an oven at 400 degrees Fahrenheit for about 50 minutes. Meatloaf is cooked when an internal thermometer inserted in the middle reads 170 degrees Fahrenheit.

Freeze baked meatloaf. Let the cooked meatloaf cool, then wrap it in foil and freeze for up to a month. I like to cut the meatloaf into slices and freeze them individually so that I can remove a slice or two when I need them.

Can I double the meatloaf recipe? Yes! You can double the recipe (which would use about 2 pounds of ground turkey). Double the recipe ingredients and expect to bake a bit longer (15 to 20 minutes longer). I use my internal thermometer as a guide.

How can I make gluten free meatloaf? For breadcrumb-free meatloaf, try gluten-free hard ground pretzels, oatmeal, brown rice cereal, or gluten-free Chex cereal in place of breadcrumbs. You should also make sure that the ketchup used is gluten-free or use homemade ketchup.

Should I add the eggs? Eggs help moisturize meatloaf, but you can eliminate them or replace them with a store-bought egg substitute.

Can I make meatloaf without milk? For dairy-free meatloaf, replace the milk with mild-flavored unsweetened vegetable milk such as hemp or almond milk.

Incredibly moist turkey meatloaf


Our Turkey Meatloaf is full of flavor, chewy in the middle, and has become a reader’s favorite! You would never guess that this meatloaf is packed with mushrooms, but that’s what makes it so delicious. Lots of finely chopped mushrooms add flavor and moisture, often missing from typical turkey meatloaf. When choosing which mushrooms to add, white button mushrooms will work perfectly well. For added flavor, try one or a combination of cremini, portobello, or shiitake brown mushrooms. Mushrooms should be chopped very finely. You can do this by hand or use a food processor.

Makes 6 servings

You will need

8 ounces of mushrooms, trimmed and very finely chopped

1 medium onion, peeled and finely chopped

2 garlic cloves, peeled and chopped

1 tablespoon of oil

3/4 teaspoon fine sea salt

1/2 teaspoon ground black pepper

1 tablespoon of Worcestershire sauce

7 tablespoons ketchup, divided, try our homemade ketchup

1 cup (60 grams) panko breadcrumbs or use homemade breadcrumbs

1/3 cup (80 mL) milk

2 large eggs, lightly beaten

1 ¼ pound ground turkey (92% lean)


  • Prepare the meatloaf
  • Heat the oven to 400 degrees Fahrenheit. Lightly oil a rimmed baking sheet (or 9-inch by 13-inch pan) lined with foil.

    Heat the oil in a large skillet over medium-low heat. Add onion and cook, stirring occasionally, until softened; about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the mushrooms, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Cook until the mushrooms release their liquid and it boils; about 10 minutes.


    Transfer the onions and mushrooms to a large bowl, then stir in the Worcestershire sauce and three tablespoons of ketchup. Let cool for 5 minutes.

    Meanwhile, combine breadcrumbs and milk in a small bowl. Stir the breadcrumb mixture and eggs into the mushrooms and onions. Using a fork or your hands, gently fold in the turkey, 1/4 teaspoon of salt and 1/4 teaspoon of pepper. The mixture will be very wet.

    Shape meatloaf into a 9-inch by 5-inch oval in the middle of the prepared baking sheet. Spread the remaining four tablespoons of ketchup on top.

  • Some stores sell ground turkey in 1 pound portions and others in 1 ¼ pound portions. While we like to use 1 ¼ pound, 1 pound of turkey is sufficient for the ingredient amounts shared in the recipe.
